    • Pour 4L (about 1 gallon plus 1 cup) of hot water (170-190°F) into 6" deep half-size steamtable pan.

    • Add all potatoes, stir for 15 seconds.

    • Let stand for 5 minutes, stir and serve. Tip: Mix by hand or prepare in a mixer

    • Pour 22 gallons of hot water (170 -190°F) into industrial size mixing bowl.

    • Pour entire bag of potatoes into mixing bowl while mixer is on low speed. Mix for 30 - 60 seconds.

    • Let potatoes sit for 5 minutes.

    • Mix on low speed for 2 minutes & serve. Do not mix on high speed.
