Ginger Carrot Mashed Potatoes

A carrot-infused mashed potato with hints of sweetness and warmth.

INSTRUCTIONS

  • 1. Prepare potato base according to directions. Hold hot.
  • 2. Cook carrots, sugar, water, ginger, salt and pepper, over medium heat, until carrots are very soft, about 10 min. Remove from heat and puree with immersion blender. Stir carrot puree into potatoes. Serve or hold hot.
