9 cupsRefried beans

4.5 cupsElote corn salsa

4.5 qtsLettuce, shredded

9 cupsRice, prepared

2.25 cupsCojita cheese, crumbled

6.75 cupsPico de Gallo

4.5 eachAvocado, cut into 12 pieces each

2.25 cupsSour cream
INSTRUCTIONS
- 1. Prepare crumbles according to package directions.
- 2. Add 1/2 cup refried beans, 1/4 cup elote corn salsa, 1/4 cup crumbles, 1 cup lettuce, 1/2 cup rice to a bowl.
- 3. Sprinkle 2 Tbsp Cojita cheese and 2 Tbsp Pico de Gallo on top. Place 1/4 cup Pico de Gallo in a ramekin on the side.
- 4. Place 3 slices of avocado on top of bowl and drizzle 2 Tbsp of sour cream over all ingredients.
- 5. Repeat steps 1-4.
