0.25 cupOlive oil

2 cupsMilk

8 cupsZucchini, shredded

2 cupsParmesan cheese, shredded

0.25 cupRoasted garlic, pureed
INSTRUCTIONS
- 1. Prepare mashed potatoes according to base prep directions. Hold hot.
- 2. Heat olive oil medium heat, add zucchini and cook, stirring frequently, until zucchini has given up most of its moisture and begins to turn light brown, about 8 min.
- 3. Add roasted garlic, salt, and milk to zucchini, bring to a simmer, about 3 min.
- 4. Stir zucchini mixture and cheese into potatoes. Serve or hold hot.
